An Alabama Tradition - West Indies Salad

Alabama is not only famous for winning football, but also winning recipes! In south Alabama, home to the largest seafood processors on the Gulf Coast, a treasured ingredient is blue crab. In the 1950's, at a small restaurant along the way to Dauphin Island, Bill Bayley created what is now a southern tradition, the West Indies Salad. Made from fresh crab meat, vinegar and oil, this simple concoction is nothing simple on the taste buds. While there have been many variations on the original, here is our version of this Alabama treat. 

 

 

WEST INDIES SALAD

 

1 # LUMB CRAB MEAT

A MEDIUM WHITE ONION-FINELY CHOPPED

4 OZ. WESSON OIL

3 OZ. CIDER VINEGAR

4 OZ. ICE WATER

SALT & PEPPER

 

MIX IN THE FOLLOWING ORDER:

 

MIX TOGETHER CRAB, ONION, SALT & PEPPER

ADD OIL & MIX

ADD VINEGAR & MIX

ADD ICE WATER & MIX

 

COVER & REFRIGERATE AT LEAST 3-4 HOURS.  ADJUST SALT & PEPPER

 

ALTERNATIVE CREATIVE RECIPE

ADD DICED RED/YELLOW BELL PEPPERS TO THE MIX
